Wolfgang Puck’s ‘CUT’ at 45 Park Lane to reopen on 3 December 2020 with new menu concept!

Dorchester Collection’s contemporary Mayfair hotel 45 Park Lane is set to reopen its famed restaurant CUT on 3 December 2020 with a new menu by recently appointed executive chef Jamie Shears.

For almost a decade, Wolfgang Puck’s CUT at 45 Park Lane has stood amongst the best restaurants in London with chef Jamie appointed to further elevate the menu with new dishes, while keeping the favourites that guests have come to know and love.

Marking a new era for the first CUT restaurant in Europe, Jamie has developed CUT’s menu by showcasing California’s diverse flavour combinations, which embraces Eastern Asian and Oceanian influences.

The menu celebrates locally and sustainably sourced ingredients from the UK with an emphasis on fish from Jamie’s home town in Devon.



Menu highlights include Grilled Native Lobster with Bang Bang Salad; Cornish Salted Caviar, Sour Cream and Savoury Doughnuts; Orkney Scallop, Mouli Kimchi and Ssamjang; East Asian Style Lamb Rack and Bulgogi with Gochujang; and Steamed Turbot, Shellfish & Shiitake Mushroom Dashi.

Jamie has also introduced new vegetarian and vegan dishes to the menu, further enhancing the hotel’s commitment to quality produce, including; Champagne Risotto with 24 Month Parmesan and White Truffle; Spinach & Tofu Dumplings with Shiitake Mushroom Bouillon; and Pumpkin Agnolotti.

Arriving for the December reopening, 45 Park Lane has appointed Ahmed Elnozahy as restaurant director of CUT, having established himself in a number of London’s leading dining destinations including ROKA and Sexy Fish. Ahmed is joined by a strong team of talent, including executive pastry chef Niamh Larkin, director of wines Fred Marti, and bar manager Francesco Orefici.



CUT at 45 Park Lane was world-renowned chef and restaurateur Wolfgang Puck’s first restaurant in Europe, which became instantly recognised for its exceptional steaks. In July 2014, CUT was the first establishment in London to serve the previously unobtainable Japanese Wagyu beef on its menu. Ready for reopening, Jamie has now introduced great quality Wagyu beef sourced in the UK.
